  • 1 pound Ground Chicken or ground turkey
  • 1 tablespoon Butter or Oil coconut oil for a tropical twist
  • 2 tablespoons Lime Juice fresh juice for best taste
  • 1 tablespoon Fish Sauce or soy sauce for vegetarian option
  • 1 teaspoon Chili Flakes adjust to taste
  • 1 tablespoon Roasted Rice Powder or toasted sesame seeds
  • ¼ cup Shallots chopped
  • ¼ cup Fresh Mint chopped
  • ¼ cup Cilantro chopped

For the Wraps

  • 8-10 leaves Butter Lettuce or romaine/cabbage

Step-by-Step Instructions

  • In a large skillet, heat 1 tablespoon of butter or oil over medium heat until shimmering. Add 1 pound of ground chicken, breaking it apart with a spatula. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and no longer pink in the center.
  • While the chicken cooks, whisk together 2 tablespoons of fresh lime juice, 1 tablespoon of fish sauce, 1 teaspoon of chili flakes, and 1 tablespoon of roasted rice powder in a mixing bowl.
  • Once the chicken is cooked, remove the skillet from heat and transfer the mixture to the bowl with the sauce. Add ¼ cup of chopped shallots, ¼ cup of fresh mint, and ¼ cup of cilantro to the bowl. Gently fold the ingredients together.
  • Lay several butter lettuce leaves on a clean serving plate. Spoon a generous amount of the chicken mixture into the center of each leaf.
  • Optionally, sprinkle the assembled wraps with additional roasted rice powder and slices of fresh chilies. Serve immediately.

Notes

Cool chicken slightly before mixing with herbs. Reheat gently on stovetop for leftovers. Store chicken filling and lettuce leaves separately for better freshness.
