Ingredients

For the Dressing

  • ¼ cup Lemon Juice Freshly squeezed

Instructions
 

Preparation

  • Bring a large pot of salted water to a rolling boil and cook the pasta according to package instructions until al dente for about 8-10 minutes.
  • Drain the pasta in a colander and rinse under cold water to stop the cooking process.
  • In a medium bowl, combine lemon juice, olive oil, salt, and pepper; whisk until emulsified.
  • In a large mixing bowl, combine cooled pasta, arugula, halved cherry tomatoes, and grated Parmesan, and gently toss.
  • Drizzle dressing over the salad and toss to coat every piece evenly.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Cover the salad and refrigerate for at least 30 minutes before serving.
