  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper to taste

For the Noodles

  • 6 sheets lasagna noodles, broken whole wheat or gluten-free if needed

For the Creamy Topping

  • 1 cup ricotta cheese part-skim to reduce calories
  • 1 cup shredded mozzarella cheese use fresh for best results
  • 2 tablespoons chopped fresh basil or parsley as a substitute

  • In a large pot over medium heat, cook ground beef, diced onion, and minced garlic until beef is browned and onion is translucent, about 5–7 minutes.
  • Stir in crushed tomatoes, diced tomatoes, chicken broth, Italian seasoning, salt, and black pepper. Increase heat to high and bring to a gentle boil.
  • Add broken lasagna noodles and stir well. Reduce heat and cook for about 10–12 minutes until noodles are tender.
  • Ladle the hot soup into bowls, ensuring a mix of beef, noodles, and broth for presentation.
  • Top each bowl with a generous spoonful of ricotta cheese, allowing it to soften in the hot broth.
  • Sprinkle mozzarella cheese and chopped basil on top for added flavor and presentation.
