For the Lemon Sauce

  • 4 tablespoons Butter Olive oil works for a dairy-free option.
  • 2 tablespoons All-Purpose Flour Gluten-free flour is great for gluten-sensitive diets.
  • 2 cups Stock (vegetable, beef, or chicken)
  • ¼ cup Lemon Juice Adjust to taste.

Step-by-Step Instructions

  • Soak the crustless bread in white wine for about 5 minutes until softened, then tear into small pieces and set aside.
  • In a large mixing bowl, combine the ground pork, lean ground beef, egg, dried parsley, dried oregano, ground cumin (if using), minced onion, minced garlic, fine sea salt, and black pepper. Mix gently for about 2-3 minutes.
  • Crumble the soaked bread into the meat mixture, and gently knead until fully incorporated. This takes about a minute.
  • Form the mixture into oval-shaped meatballs, about 65-70 grams each, until you have approximately 15 meatballs. Place them on a parchment-lined tray and refrigerate for at least 1 hour.
  • Heat a tablespoon of olive oil in a large skillet over medium-high heat and add the meatballs, cooking for about 4 minutes on each side until golden brown.
  • In the same skillet, reduce heat to medium and add the butter, melting it then whisking in the flour. Gradually add the stock and lemon juice, whisking continuously until the sauce thickens.
  • Carefully return the meatballs to the skillet, making sure they are coated with sauce. Cover and simmer on low heat for about 20 minutes, turning gently halfway through.
  • Serve the meatballs warm on a platter, paired with sides like roasted Greek potatoes or a fresh salad.

Notes

Refrigerate meatballs for at least an hour for the best results.
