  • 1.5 pounds Chicken thighs or breasts boneless and skinless for juicy bites
  • 3 stalks Fresh lemongrass finely chopped
  • 4 cloves Garlic minced
  • 1-2 Red chilies finely chopped; adjust for spice level
  • 2 tablespoons Fish sauce adds umami flavor
  • 1 tablespoon Soy sauce for savory balance
  • 1 tablespoon Sugar helps caramelize chicken
  • 1 tablespoon Vegetable oil for searing
  • 1 teaspoon Black pepper adds warmth

  • Fresh cilantro for garnish

Instructions
 

Preparation

  • In a medium-sized mixing bowl, combine the finely chopped lemongrass, minced garlic, and chopped red chilies. Add the fish sauce, soy sauce, sugar, vegetable oil, and black pepper. Stir well until fully combined and fragrant.
  • Take your boneless and skinless chicken and place it in the bowl with the marinade. Coat thoroughly, cover with plastic wrap, and refrigerate for at least 30 minutes.
  • Heat your grill or skillet over medium-high heat for about 5 minutes, ensuring it is well-oiled.
  • Remove the chicken from the marinade, allowing excess to drip off. Grill or cook for 6-7 minutes on each side until golden brown.
  • Transfer cooked chicken to a plate and let it rest for about 5 minutes.
  • Slice chicken into strips for serving.
  • Garnish with fresh cilantro and serve with lime wedges.

Notes

For the best flavor, marinate for 1-2 hours. Ensure the grill or skillet is adequately preheated for perfect searing.
