Ingredients
  

For the Chicken

  • 2 lbs Chicken (breasts or thighs) Preferred cut can work
  • ¼ cup Olive oil
  • ¼ cup Lime juice
  • 1 tablespoon Lime zest
  • 1 tablespoon Brown sugar
  • 1 tablespoon Chili powder or preferred spice

For the Salsa

  • 1 medium Pineapple (fresh, grilled) Can swap with grilled mango or peaches
  • 1 cup Red Bell Peppers Chopped
  • 1 cup Onions Chopped
  • 1 medium Jalapeno Adjust for spice preference

For the Tacos

  • 8 pieces Tortillas (corn or flour) Homemade or high-quality store-bought
  • 1 cup Avocado Crema Blend of avocado, sour cream, and lime juice
  • 1 cup Shredded Cheese (optional) Use Monterrey Jack or Pepper Jack

Directions

  • In a bowl, whisk together olive oil, lime juice, lime zest, brown sugar, and spices. Coat the chicken thoroughly and marinate for at least 30 minutes.
  • Preheat grill or skillet to medium-high heat (around 400°F). Grill chicken for 6-7 minutes per side until charred and fully cooked.
  • Grill pineapple, red bell peppers, onions, and jalapenos for 5-7 minutes until charred. Chop and mix ingredients with lime juice, cilantro, cumin, and ginger.
  • Blend avocado, sour cream, lime juice, and seasonings in a food processor until smooth to create Avocado Crema.
  • Warm tortillas on a skillet or the grill. Layer melted cheese, sliced chicken, grilled pineapple salsa, and drizzle with avocado crema before serving.

Notes

For best flavor, marinate chicken overnight. Use fresh ingredients for optimal taste and texture.
