Step-by-Step Instructions

  • Preheat your oven to 180°C (350°F).
  • Crush the vegan cookies into fine crumbs and mix with melted vegan butter. Press into a springform pan and bake for 10 minutes.
  • In a saucepan, combine diced apples, brown sugar, cinnamon, and cornstarch. Cook for 8-10 minutes until softened.
  • Mix oats, chopped nuts, flour, brown sugar, melted vegan butter, and cinnamon to create the crumble topping.
  • Blend soaked cashews, silken tofu, maple syrup (or sugar), vegan yogurt, lemon juice, cornstarch, vanilla extract, and salt until smooth.
  • Layer half of the cheesecake filling on the crust, followed by the cooked apple mixture, then the remaining filling and crumble topping.
  • Bake for 55-60 minutes until edges are set with a slight jiggle in the center.
  • Cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
  • Remove from the springform pan, slice, and serve chilled.
