Ingredients
  

For the Chicken Marinade

  • 1 pound boneless skinless chicken thighs cut into 1-inch pieces
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons honey
  • 1.5 tablespoons Sriracha adjust to taste
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon toasted sesame oil or neutral oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 0.25 teaspoon black pepper

For the Sauce

  • 0.25 cup honey
  • 2-3 tablespoons Sriracha adjust to taste
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon ketchup optional
  • 1-2 teaspoons cornstarch
  • 0.25 cup water or low-sodium chicken broth

For the Vegetables

  • 2 cups broccoli florets fresh or frozen
  • 1 medium carrot sliced on a bias
  • 1 medium red bell pepper thinly sliced, optional

For Cooking and Garnishing

  • 2 tablespoons neutral oil for stir-frying

  • 4 cups cooked rice or quinoa for serving
  • 2 tablespoons green onion thinly sliced for garnish
  • 1 tablespoon toasted sesame seeds for garnish

Step-by-Step Instructions

  • Rinse 1 ½–2 cups of uncooked rice under cold water until the water runs mostly clear, then cook according to package directions.
  • In a medium bowl, whisk together soy sauce, honey, sriracha, rice vinegar, sesame oil, garlic, ginger, and black pepper. Add chicken and marinate.
  • In a small bowl, combine honey, sriracha, soy sauce, rice vinegar, ketchup, and water or broth. Add cornstarch and whisk until smooth.
  • Cut broccoli into florets, slice carrot, and bell pepper. Pat broccoli dry with a paper towel.
  • In a large skillet, heat oil and stir-fry broccoli and carrot for 4–5 minutes. Add bell pepper in last 2 minutes.
  • In the same skillet, heat oil and cook chicken until browned and cooked through, about 3-4 minutes per side.
  • Reduce heat, pour sauce over cooked chicken, and simmer until thickened, about 1-3 minutes.
  • Add vegetables back to the skillet and toss with chicken and sauce for 1-2 minutes.
  • Divide rice among bowls, top with the chicken and veggie mixture, and garnish with green onions and sesame seeds.

Marinating time enhances flavor; control sriracha to adjust heat; serve warm with garnishes for best texture.
