For the Creamy Sauce

  • 1 cup Yogurt provides creaminess
  • 1 medium Onion finely chopped
  • 4-6 cloves Garlic minced
  • 1 inch Ginger grated
  • Salt to taste
  • Water as needed for sauce consistency

Step-by-Step Instructions

  • Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add 1 teaspoon of cumin seeds and sizzle for about 30 seconds.
  • Stir in 1 finely chopped onion. Cook for 5-7 minutes until golden brown and fragrant.
  • Incorporate 4-6 minced garlic cloves and 1 inch of grated ginger. Sauté for another minute.
  • Add 2 tablespoons of Kashmiri chili, 1 teaspoon each of coriander and turmeric powder, and salt. Cook for 2-3 minutes.
  • Add 2 pounds of chicken pieces and sauté for 5-7 minutes until lightly browned.
  • Reduce heat to low, add 1 cup of yogurt, mixing thoroughly for about 3 minutes.
  • Pour in half a cup of water to achieve your desired sauce consistency. Stir and bring to simmer for about 5 minutes.
  • Cover and reduce heat to low. Cook quietly for 45 minutes, stirring occasionally.
  • Before serving, stir in 1 teaspoon of garam masala and let it rest.

Notes

Goes well with warm naan or fluffy basmati rice. Can be made a day ahead for deeper flavors.
