- 2 cups sushi rice
- 1 ½ pounds salmon
- 2 tablespoons low sodium soy sauce or coconut aminos
- 1 tablespoon toasted sesame oil
- ½ cup Kewpie mayo
- 1-2 tablespoons sriracha
- 2 tablespoons rice vinegar
- 4 ounces cream cheese
- 2 green onions chopped
- ¼ cup furikake seasoning
- nori squares for serving
- tortilla chips for serving
Cook the sushi rice according to the package instructions until tender and fluffy.
Broil or bake salmon until it flakes easily, then let cool and shred.
In a bowl, mix shredded salmon with soy sauce, sesame oil, Kewpie mayo, sriracha, rice vinegar, cream cheese, and green onions.
Preheat oven to 400°F (200°C) and press sushi rice into a baking dish.
Spread salmon mixture over the rice and sprinkle with furikake seasoning.
