  • Preheat your oven to 425°F (220°C) and prepare a baking sheet with a wire rack lightly sprayed with non-stick spray.
  • In a shallow dish, combine panko bread crumbs, finely shredded parmesan, chopped parsley, garlic powder, salt, and pepper. Drizzle olive oil over the mixture and stir until evenly coated.
  • In another dish, crack a large egg and beat until combined; this will be the binder for the breading.
  • Dredge each skinless salmon fillet in the beaten egg, then press each fillet into the panko mixture, ensuring a generous coating.
  • Place each coated salmon fillet on the prepared wire rack and sprinkle any remaining panko mixture on top for additional texture.
  • Bake in the preheated oven for 10-15 minutes until the salmon is cooked through and the crust is golden brown.
  • Remove from the oven, let rest briefly, and serve with fresh lemon slices.

Notes

Store leftovers in an airtight container for up to 2 days in the fridge. For longer storage, wrap tightly and freeze for up to 2 months. Reheat in a preheated oven at 350°F (175°C).
