  • 2 pounds sweet potatoes peeled and cut into cubes
  • 3 tablespoons olive oil for richness and crisp

  • ½ teaspoon smoked paprika optional
  • ½ teaspoon dried thyme or Italian seasoning

  • ½ cup Parmesan cheese freshly grated
  • 2 tablespoons chopped fresh parsley or chives
  • ½ lemon lemon zest optional

Step-by-Step Instructions

  • Preheat your oven to 425°F (220°C) and prepare a large baking sheet by lining it with parchment paper or lightly greasing it.
  • Peel and cut the sweet potatoes into even 1-inch cubes, then transfer them into a large mixing bowl.
  • Drizzle the sweet potatoes with olive oil and add the minced garlic, sea salt, black pepper, smoked paprika, dried thyme or Italian seasoning, and red pepper flakes. Toss thoroughly to coat evenly.
  • Spread the seasoned sweet potatoes on the prepared baking sheet in a single layer, leaving space between each piece.
  • Roast in the oven for 15 minutes without stirring to develop a crispy crust.
  • Carefully flip the sweet potatoes and roast for an additional 10 to 15 minutes until tender and nicely browned.
  • Remove from the oven and sprinkle grated Parmesan over the hot sweet potatoes. Toss gently to help the cheese adhere.
  • Return to the oven for an additional 3 to 5 minutes until the cheese melts and turns lightly golden.
  • Sprinkle with lemon zest and chopped parsley before serving. Adjust seasoning as needed.
  • Transfer to a serving platter and enjoy immediately.

Notes

These roasted sweet potatoes pair well with grilled chicken or vegetarian dishes. Store leftovers in an airtight container for up to 3 days.
