Step‑by‑Step Instructions for Crispy Roast Potatoes

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the potatoes, then cut them into even-sized chunks, about 1 to 2 inches thick.
  • Place the potato chunks into a large pot filled with salted water and bring it to a rolling boil. Boil for about 10 minutes, then reduce to a simmer. Test the potatoes with a fork; they should be slightly tender but hold their shape.
  • Once boiled, drain the potatoes in a colander and let them sit for a few minutes to release excess moisture.
  • Drizzle the olive oil onto a large baking sheet and place it in the oven for about 5 minutes until shimmering.
