  • Begin by preheating your oven to 400°F (200°C). Toss tomato wedges and garlic with olive oil, salt, and pepper, then roast for 25-30 minutes.
  • Heat a dutch oven over medium heat, add olive oil, and sauté onions until translucent.
  • Transfer roasted ingredients to a blender with sautéed onions, blend until smooth.
  • Return mixture to the pot, add cream, salt, seasoning, and simmer for 5-6 minutes.
  • Ladle into bowls, garnish with roasted tomatoes, and serve hot with grilled cheese.
