Step-by-Step Instructions

  • In a large bowl, toss chicken pieces with cornstarch until evenly coated. Set aside.
  • Heat vegetable oil in a large skillet over medium-high heat. Cook the coated chicken for 5-7 minutes until golden brown.
  • In the same skillet, add additional vegetable oil and stir-fry the chopped bell peppers and onion for about 3-4 minutes.
  • In a medium bowl, mix vinegar, ketchup, soy sauce, and sugar. Add minced garlic and grated ginger, stirring until dissolved.
  • Return chicken to the skillet, pour the sauce over, and stir well. Cook for an additional 2-3 minutes.
  • Stir in pineapple chunks and simmer for about 5 minutes.
  • If desired, combine cornstarch with water, pour into the skillet, and cook until thickened.
  • Adjust seasoning with salt and pepper, then serve hot over rice or noodles.

Notes

Ensure the chicken is well-coated with cornstarch for a crispy exterior. Use fresh vegetables for best results.
