  • Wash and dry the mini potatoes thoroughly. Slice each potato thinly, leaving about ¼ inch at the bottom intact.
  • Transfer the sliced mini potatoes to a mixing bowl. Drizzle with olive oil and toss until well-coated.
  • Sprinkle sea salt, black pepper, garlic powder, and onion powder over the oiled potatoes. Toss to season evenly.
  • Place seasoned mini potatoes on the prepared baking sheet, ensuring even spacing.
  • Bake for 30-35 minutes, looking for golden brown tops and tender interiors.
  • While baking, combine sour cream, mayonnaise, Cajun seasoning, and lemon juice in a bowl. Adjust salt and pepper to taste.
  • Once baked, let potatoes cool slightly, drizzle with olive oil, and sprinkle with parsley.
