Ingredients
  

For the Potatoes

  • 1 pound Baby potatoes halved
  • 3 tablespoons Extra virgin olive oil for drizzling
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste

For the Feta and Garlic

  • 1 block Feta cheese
  • 4 cloves Garlic peeled

For Garnish

  • 2 tablespoons Fresh parsley chopped
  • Red pepper flakes optional

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine the halved baby potatoes with the extra virgin olive oil, dried oregano, salt, and black pepper. Toss everything thoroughly for about a minute.
  • Spread the seasoned potatoes evenly in a single layer on your large baking sheet. Add the peeled garlic cloves among the potatoes.
  • Create a space in the center of the baking sheet and place the block of feta cheese there. Drizzle a bit more olive oil over the feta if desired.
  • Carefully transfer the baking sheet into your preheated oven and roast everything for 25-30 minutes.
  • Once done, remove from the oven and let it cool for a few minutes. Using a fork, gently mash the baked feta cheese and mix it with the roasted garlic cloves.
  • Serve immediately, garnishing with fresh chopped parsley and optional red pepper flakes.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispiness.
