  • In a separate skillet, cook the bacon over medium heat until crispy, about 6-8 minutes.
  • Roll out the puff pastry on a floured surface to fit the baking sheet.
  • Combine the pumpkin puree and ricotta cheese in a bowl, seasoning with salt and pepper.
  • Spread the pumpkin and ricotta mixture over the pastry, leaving a half-inch border.
  • Distribute the caramelized onions and crispy bacon over the filling.
  • Brush sage leaves with melted butter and arrange them over the filling.
  • Fold the edges of the puff pastry inward to form a border and brush it with beaten egg.
  • Bake in the oven for 20-25 minutes until golden brown, then cool for a few minutes before slicing.
