Step-by-Step Instructions

  • In a large mixing bowl, combine all-purpose flour, fine semolina, salt, sugar, and dry yeast. Mix thoroughly using a whisk.
  • Gradually add warm water to the mixture while stirring continuously to create a soft, sticky dough.
  • Turn the sticky dough onto a lightly floured surface and knead for at least 10 minutes until smooth and elastic.
  • Cover the dough with a damp cloth and allow it to rest for about 30 minutes in a warm place.
  • Gently punch down the dough and divide it into equal portions, forming each piece into a smooth ball coated in oil.
  • Let the oiled dough balls rest for an additional 10 minutes on a lightly greased surface.
  • On a well-oiled surface, flatten one dough ball into a thin, translucent square sheet.
  • Brush the surface of the dough with melted butter and sprinkle fine semolina over it.
  • Fold the sides of the dough sheet towards the center to form a square envelope.
  • Repeat with the remaining dough balls and stack them on a lightly oiled plate.
  • Preheat a non-stick frying pan over medium heat and lightly oil the surface.
