For the Cookie Dough

  • 1.5 cups Salted butter softened
  • 1.25 cups Light brown sugar packed
  • 1 tablespoon Pure vanilla extract
  • 2 units Eggs at room temperature
  • 4.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Ginger
  • 0.25 teaspoon Nutmeg
  • 0.5 teaspoon Salt

For the Chocolate Filling

  • 12 ounces Milk chocolate melted
  • 2 tablespoons Salted butter

For the Topping

  • 3 tablespoons Cinnamon sugar

Step-by-step Instructions

  • Cream together the salted butter, light brown sugar, and pure vanilla extract until light and fluffy, about 3-5 minutes. Mix in the eggs one at a time. Gradually add flour, baking soda, cinnamon, ginger, nutmeg, and salt until a dough forms.
  • Flour your work surface and divide the dough in half. Flatten into disks, roll out to ¼ inch thick, and cut out cookies using a pumpkin-shaped cutter. Cut out eyes and mouth on half of the cookies.
  • Cover the cookies and freeze for 15-20 minutes to firm up.
  • Preheat the oven to 350°F and bake cookies for 8-12 minutes until lightly golden. Cool on a rack.
  • In a medium pot, brown the salted butter over medium heat until toasted, about 2-3 minutes. Let cool.
  • Brush browned butter over the tops of the cookies and sprinkle with cinnamon sugar.
  • Spread melted milk chocolate on the flat side of cookies without faces. Top with the decorated halves, pressing gently to adhere.
  • Serve immediately or store in an airtight container for up to 3 days.

Notes

Ensure butter is softened for easy creaming and do not skip the chilling step to maintain cookie shape.
