  • 1.25 cups all-purpose flour Sifted for lighter texture
  • 0.5 cups cold butter Cubed for a flaky crust

  • 2-4 tablespoons ice water Use sparingly

For the Filling

  • 1 cup corn syrup Binding agent
  • 1 cup brown sugar Light or dark
  • 3 large eggs Or flax eggs for vegan option
  • 1 teaspoon vanilla extract Warm, aromatic note
  • 1 cup chopped pecans Star ingredient
  • 1 tablespoon melted butter Adds rich flavor

Preparation Steps

  • In a mixing bowl, combine all-purpose flour, salt, and sugar. Add cold, cubed butter and cut into the mixture until it resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, mixing gently until the dough holds together. Gather into a disk, wrap in plastic, and chill for at least 30 minutes.
  • On a floured surface, roll the chilled dough into a 12-inch circle and transfer to a pie pan, pressing into edges. Trim excess dough.
  • Whisk together corn syrup and brown sugar until smooth. Add eggs and vanilla, whisking until combined.
  • Stir in melted butter and fold in chopped pecans, reserving some for garnishing.
  • Preheat oven to 350°F (175°C). Pour filling into prepared crust and bake for 50-60 minutes, until edges are set.
  • Allow to cool on a wire rack before slicing. Serve plain or with vanilla ice cream.

Notes

Use cold ingredients for a flaky crust. Chill dough and don’t overmix to maintain light texture.
