  • 2 tablespoons instant coffee dissolved in 4 tablespoons of hot water
  • 4 tablespoons hot water for dissolving coffee
  • 100 grams chopped walnuts or pecans as a substitute
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing and lining with parchment paper.
  • In a small bowl, combine 2 tablespoons of instant coffee with 4 tablespoons of hot water until dissolved and let cool.
  • In a large bowl, beat 225 grams of unsalted butter and 225 grams of granulated sugar until light and fluffy.
  • Add 4 large eggs to the mixture one at a time, beating well after each addition.
  • Slowly stir in the cooled coffee mixture and 1 teaspoon of vanilla extract until fully mixed.
  • In another bowl, whisk together 225 grams of all-purpose flour, 1 teaspoon of baking powder, and 100 grams of chopped walnuts.
  • Gradually fold the dry ingredients into the wet batter until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
