Instructions

Step‑by‑Step Instructions

  • Preheat your oven to 350°F (175°C) and prepare a 15x10 inch jelly roll pan by lining it with parchment paper.
  • In a large mixing bowl, sift together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, beat the eggs with vegetable oil, vanilla extract, and buttermilk until smooth.
  • Gradually pour the wet ingredients into the dry mixture, folding gently until just combined.
  • Pour the batter into the prepared jelly roll pan and spread it evenly.
  • Bake for 12-15 minutes, or until a toothpick inserted comes out clean.
  • While the cake bakes, prepare a damp kitchen towel sprinkled with powdered sugar.
  • Once baked, cool the cake for 5 minutes, then invert it onto the prepared towel and roll it up tightly.
  • To make the frosting, beat the heavy cream until soft peaks form, then mix in powdered sugar and vanilla extract until stiff peaks are achieved.
  • Carefully unroll the cooled cake and spread whipped frosting over it, leaving a border.
  • Roll the cake back up without the towel and place seam side down on a platter.
  • Dust the cake with cocoa powder and powdered sugar, and decorate with chocolate shavings or sprinkles.
  • Chill the cake in the refrigerator for at least an hour before serving.

Notes

Allow the cake to cool completely while rolled up in a towel to retain its shape. Don't overmix the batter for a light texture. Chill the frosted cake to enhance flavors before serving.
