Ingredients
  

For the Crust

  • 250 g digestive biscuits
  • 100 g butter, melted
  • 30 g cocoa powder

For the Cheesecake Filling

  • 600 g full fat cream cheese
  • 150 g icing sugar
  • 30 g cocoa powder
  • 300 ml double cream

For the Dark Chocolate Ganache

  • 200 g dark chocolate
  • 65 ml double cream

For the White Chocolate Ganache

  • 100 g white chocolate
  • 15 ml double cream
  • Sugarflair superwhite powder optional

Preparation Steps

  • Begin by using a food processor to finely crush the digestive biscuits until they resemble sand, then combine with melted butter and cocoa powder. Press this mixture into the base of a springform tin and refrigerate for 30 minutes.
  • In a large bowl, combine full fat cream cheese, icing sugar, and cocoa powder until smooth. Add double cream and whisk until thick.
  • Spoon the cheesecake filling over the chilled biscuit base and smooth the top. Cover and refrigerate for at least 4 hours or overnight to set.
  • Carefully remove the cheesecake from the tin and smooth the sides for a clean finish.
  • For the dark chocolate ganache, microwave dark chocolate and double cream until melted and smooth, then pour over cheesecake.
  • For the white chocolate ganache, microwave white chocolate and double cream until melted. Optional: Add superwhite powder.
  • Transfer white chocolate ganache into a piping bag and create a spiderweb design on top of the cheesecake.

Notes

Store leftovers in an airtight container for up to 5 days. Slices can be frozen for up to 3 months.
