Ingredients
  

For the Noodles

  • 2 packages Ramen noodles 6 oz each; discard seasoning packets

For the Stir Fry

  • 1 lb Boneless, skinless chicken thighs adds a juicy, tender protein
  • 2 tablespoon Vegetable oil for high-heat cooking
  • 1 Red bell pepper sliced
  • 1 cup Snap peas
  • 1 Carrot julienned
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 3 Green onions sliced with white and green parts separated

For the Sauce

  • ¼ cup Soy sauce can use low-sodium
  • 2 tablespoon Oyster sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • ¼ teaspoon White pepper

Cooking Steps

  • Begin by bringing a large pot of water to a rolling boil. Add the ramen noodles and cook for about 2 minutes, then drain and set aside.
  • In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, and white pepper, set aside.
  • Heat 1 tablespoon of vegetable oil in a large wok over high heat. Add chicken thighs, cooking for 5–6 minutes until golden brown, then remove from the pan.
  • In the same pan, add the remaining vegetable oil and stir-fry red bell pepper, snap peas, and carrot for 2–3 minutes.
  • Add minced garlic, ginger, and the white parts of green onions to the pan and stir-fry for about 30 seconds.
  • Add the drained ramen noodles and cooked chicken back into the pan. Pour in the sauce, stir-fry everything together for another 2–3 minutes until heated through.
  • Garnish with green onion tops and serve hot.

Notes

Undercook noodles slightly to absorb more flavors. Use high heat for best results. Fresh ingredients enhance taste and color.
