Step-by-Step Instructions

  • Begin by thinly slicing your onions and cutting the zucchini into half-moons. Set these ingredients aside.
  • In a large pot, bring salted water to a rolling boil. Add pasta and cook according to package directions until al dente, about 8-10 minutes. Reserve ½ cup pasta water; drain remaining water and set pasta aside.
  • In a large skillet, heat olive oil over medium heat. Add the sliced onions and stir occasionally, caramelizing for about 15-20 minutes until golden brown.
  • Add the zucchini and minced garlic to the skillet, sauté for an additional 5-7 minutes until zucchini is tender but crisp.
  • Add drained pasta to the skillet and toss everything together over low heat. Incorporate reserved pasta water until creamy consistency is achieved.
  • Remove from heat, sprinkle with Parmesan cheese, and serve immediately. Optionally drizzle with more olive oil.

Notes

Allow onions to caramelize slowly for enhanced sweetness. Reserve pasta water for a creamy sauce finish. Cut zucchini uniformly for even cooking and don’t overcook it.
