  • In a large bowl, whisk together 300 g of all-purpose flour, 60 g of granulated sugar, and 1 teaspoon of salt. Add 220 g of cold, cubed unsalted butter, mixing until the mixture resembles coarse crumbs. Gradually incorporate 3 tablespoon of cold water until the dough comes together. Shape it into a disk, wrap it in plastic wrap, and refrigerate for about 30 minutes to firm up.
  • While the dough chills, peel, core, and slice your favorite apples. In a large skillet over medium heat, melt 75 g of unsalted butter and add the sliced apples. Mix in 110 g of brown sugar, 1¼ teaspoon of ground cinnamon, ¼ teaspoon of salt, and 2½ tablespoon of cornstarch. Cook for approximately 10-12 minutes, stirring occasionally until the apples are tender, then remove from heat to cool.
  • Preheat your oven to 190°C (375°F). On a lightly floured surface, roll out half of the chilled dough until it’s large enough to fit your pie dish. Carefully transfer the rolled dough to the dish, trimming any excess from the edges. Sprinkle 5 tablespoon of almond flour evenly on the bottom to absorb juices, then pour in the cooled apple filling, spreading it evenly.
  • Roll out the remaining dough into a circle for a full crust or cut it into strips if you prefer a lattice design. If covering with a full crust, gently lay it over the filling. Crimp the edges to seal tightly, ensuring no filling leaks out during baking. For a beautiful finish, brush the top with an egg wash made from beating 1 egg with 1 tablespoon of water, then sprinkle a bit of brown sugar on top.
  • Place your assembled Apple Pie à la Mode into the preheated oven. Bake for about 50-60 minutes, or until the crust is golden brown and the filling is bubbling. Keep an eye on it—if the edges brown too quickly, cover them with foil. Once done, remove from the oven and allow the pie to cool for at least 30 minutes to set before serving.
