  • 1 ½ lbs potatoes for mashing for creamy mash
  • ½ cup milk for creamy texture
  • ¼ cup butter adds richness

Instructions

Step-by-Step Instructions

  • Begin by seasoning the lamb pieces with salt and black pepper. Heat vegetable oil in a large pot over medium-high heat. Brown the lamb on all sides for about 5-7 minutes, then set aside.
  • In the same pot, add the sliced onion and minced garlic. Sauté until translucent, about 3-4 minutes, to build flavor.
  • Return the browned lamb to the pot. Add the carrots and potatoes. Pour in the broth and stout. Stir in tomato paste, thyme, parsley, and bay leaves.
  • Bring the stew to a boil, then reduce to low heat and cover. Simmer for 1 ½ to 2 hours, stirring occasionally.
  • While the stew simmers, prepare the mashed potatoes. Boil diced potatoes until tender, about 15-20 minutes. Drain and return to pot.
  • Add milk and butter to the drained potatoes, mashing until smooth. Season with salt and pepper to taste.
  • Once the stew is cooked, remove bay leaves and adjust seasoning. Serve hot with a scoop of creamy mashed potatoes.
  • Garnish with additional chopped parsley before serving.
