For the Stew

  • 2 pounds beef chuck roast cut into 1-inch cubes
  • 2 tablespoons olive oil for sautéing

  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth low-sodium preferred
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 leaves bay leaves remove before serving
  • 4 large carrots peeled and cut into chunks
  • 4 medium potatoes peeled and diced
  • 2 cups mushrooms sliced
  • 1 cup frozen peas

For Thickening

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water to dissolve cornstarch

Step-by-Step Instructions

  • Set your Instant Pot to sauté mode and heat olive oil. Season the beef chuck roast with salt and pepper, brown in batches for 3-4 minutes per side, then set aside.
  • In the same pot, add chopped onion and minced garlic. Sauté for about 3-4 minutes until onion is translucent.
  • Pour in beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Stir well to dissolve tomato paste.
  • Return browned beef to the pot with carrots, potatoes, and mushrooms. Mix gently and seal the pot.
  • Lock the lid and set to manual high pressure for 35 minutes. Allow natural pressure release for 10 minutes, then quick release.
  • Remove lid, discard bay leaves, and set to sauté. Mix cornstarch with cold water and stir into the stew to thicken.
  • Add frozen peas and cook on sauté for an additional 5 minutes until heated through.
  • Taste and adjust seasoning as needed. Serve hot with crusty bread.
