Ingredients
  

Strawberry Reduction

  • 2 cups fresh or frozen strawberries
  • ½ cup granulated sugar

Shortbread Crust

  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • a pinch fine salt

Strawberry Cheesecake Filling

  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon zest (optional)
  • 16 oz full-fat cream cheese room temperature
  • ½ cup full-fat sour cream
  • 1 cup strawberry reduction
  • 1 teaspoon vanilla extract
  • 3 eggs room temperature

Preparation Steps

  • Blend 2 cups of strawberries with ½ cup of granulated sugar until smooth. Cook in a saucepan until thickened.
  • Preheat oven to 350°F. Combine shortbread crust ingredients, press into springform pan, and bake until golden.
  • In a bowl, mix filling ingredients until smooth, then pour into cooled crust.
  • Bake cheesecake at 300°F for 20 mins, reduce to 225°F and bake for 2 hours.
  • Turn off oven and cool cheesecake inside for 1 hour, then chill in refrigerator for at least 3 hours.
  • Pour reserved strawberry reduction over cheesecake before serving and garnish with fresh strawberries.
