Step-by-Step Instructions

  • Begin by bringing a large pot of salted water to a rolling boil. Add your favorite pasta and cook according to package instructions until al dente, usually about 8–10 minutes. Once done, reserve ½ cup of the pasta water, then drain the rest in a colander.
  • In a large skillet, heat 2 tablespoons of olive oil or butter over medium heat. Once hot, add the sliced mushrooms and sauté for 6–7 minutes, stirring occasionally, until they become golden brown and tender.
  • Next, stir in the minced garlic, sprinkling in ½ teaspoon of salt and ¼ teaspoon of black pepper. Cook for another 1–2 minutes, allowing the garlic to become fragrant. Then add the fresh spinach to the skillet, tossing gently until it wilts down, which should take about 2–3 minutes.
  • Reduce the heat to low, and pour in ½ cup of heavy cream or half-and-half into the skillet. Add ¼ cup of grated Parmesan cheese, stirring until it melts and combines into a rich, creamy sauce.
  • Once your sauce has thickened, toss the drained pasta into the skillet, mixing everything together. Gradually add the reserved pasta water until you reach your desired sauce consistency.
  • To serve, plate your Spinach Mushroom Pasta and sprinkle additional Parmesan cheese on top. Consider pairing with garlic bread or a fresh salad for a complete meal.

Notes
