Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat about two tablespoons of extra virgin olive oil over medium heat. Add the sliced sweet onions and sauté them for 10-15 minutes until soft and caramelized.
  • Introduce the sliced Yukon Gold potatoes to the skillet. Season with salt and pepper and cook for another 5-7 minutes until slightly softened.
  • Whisk together 6-8 large eggs in a bowl. Add salt and pepper to taste and whisk until frothy.
  • Pour the whisked eggs evenly over the onion and potato mixture in the skillet.
  • Sprinkle crumbled feta cheese on top of the egg mixture. Transfer the skillet to your preheated oven and bake for 25-30 minutes.
  • Let the frittata cool for about 5-10 minutes before slicing into wedges.

Notes
