For the Gnocchi

  • 16 ounces Gnocchi homemade or store-bought

For the Sauce

  • 4 tablespoons Butter or olive oil for dairy-free
  • 2 cups Milk 2% or heavy cream or plant-based milk
  • 4 tablespoons Flour use gluten-free flour if needed
  • to taste Salt adjust to your liking
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano

For the Cheese

  • ½ cup Parmesan Cheese plus more for topping
  • 1 cup Fontal Cheese or substitutes like Gruyere or Gouda

For Garnish

  • to taste Fresh Thyme optional

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish with butter.
  • Cook gnocchi in boiling salted water for 2–3 minutes until they float, then drain.
  • Melt butter in a saucepan over medium heat, whisk in flour to create a roux.
  • Gradually add milk to the roux while whisking until the sauce thickens.
  • Stir in salt, basil, oregano, Parmesan, and Fontal cheese until melted and smooth.
  • Fold the cooked gnocchi into the cheese sauce until evenly coated.
  • Pour the mixture into the prepared baking dish and top with remaining Parmesan.
  • Bake for 20–25 minutes until golden and bubbly on top.

Notes

For a richer sauce, add heavy cream. Customize with vegetables or proteins as desired.
