Steps

  • Preheat your oven to a high heat on the broil setting, ideally around 450°F (230°C).
  • Melt unsalted butter in a small saucepan over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in chopped parsley.
  • Clean and dry the Portobello mushrooms. Place them upside down on a baking tray lined with parchment paper. Coat the underside with the garlic butter mixture.
  • Layer the buttered mushrooms with slices of fresh mozzarella cheese and halved grape or cherry tomatoes.
  • Transfer the baking tray to the oven and broil the mushrooms for approximately 8 minutes, until cheese is melted and mushrooms are tender.
  • Remove from the oven, let cool for a minute, then sprinkle with fresh basil and drizzle with balsamic glaze.
