Mousse Preparation

  • Melt Dark Chocolate: Finely chop dark chocolate and place in a heatproof bowl over simmering water until melted and smooth. Remove from heat and cool slightly.
  • Whisk Egg Yolks and Sugar: In a bowl, combine egg yolks and sugar. Beat with a mixer until pale and fluffy, about 3-5 minutes.
  • Combine Chocolate and Egg Mixture: Fold melted dark chocolate into egg yolk mixture until smooth.
  • Whip Heavy Cream: In another bowl, whip heavy cream to soft peaks, about 3-4 minutes.
  • Fold in Whipped Cream: Gently fold whipped cream into chocolate mixture.
  • Whip Egg Whites: In a clean bowl, whip egg whites to stiff peaks, about 3-5 minutes.
  • Fold in Egg Whites: Gently fold egg whites into chocolate mixture in batches.
  • Pour dark chocolate mousse into a springform pan and refrigerate for about 2 hours until set.
  • Prepare Milk Chocolate Layer: Melt milk chocolate and cool. Whisk egg yolks and sugar, then combine with melted milk chocolate.
  • Fold in Milk Layer Ingredients: Whip heavy cream and fold into milk chocolate mixture. Incorporate whipped egg whites, then pour over dark chocolate layer. Chill for 2 hours until set.
  • Create White Chocolate Layer: Melt white chocolate and cool. Blend with egg yolks and sugar, then fold in whipped cream and egg whites.
  • Chill White Chocolate Layer: Pour white chocolate mousse over milk chocolate layer, cover, and refrigerate for 2 hours.
  • Serve the Torte: Remove from springform pan, slice, and serve chilled.
