For the Creamy Sauce

  • 1 cup heavy cream gives a luscious texture
  • 1 cup Gruyere cheese, shredded melts beautifully, enhances flavor
  • ½ teaspoon fresh thyme adds herbaceousness
  • salt to taste
  • black pepper to taste
  • lemon juice to taste

Step-by-Step Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, reserving ½ cup pasta water. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add leeks and salt, cooking for 10-12 minutes until golden.
  • Add butter and mushrooms to the skillet. Cook for 5-7 minutes until mushrooms are golden and tender.
  • Stir in garlic and thyme, cooking for about 1 minute until fragrant.
  • Pour in white wine, scrape the pan, and simmer until reduced. Then add heavy cream and cook until thickened, about 3-4 minutes.
  • Stir in Gruyere cheese until melted. Adjust sauce with reserved pasta water if too thick.
  • Season with salt, pepper, and lemon juice. Toss in the pasta until evenly coated.

Notes

For best results, enjoy fresh after cooking. This pasta pairs well with a crisp green salad or white wine.
