  • Preheat your oven to 350°F (175°C) and grease a 9-inch baking pan, lining the bottom with parchment paper.
  • Peel, core, and thinly slice the apples. Set them aside in a bowl.
  • In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon. Add cardamom if using.
  • In a separate bowl, whisk together the wet ingredients: melted butter, sugar, eggs, vanilla extract, and yogurt or sour cream until smooth.
  • Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  • Spread half of the batter into the prepared pan, then layer half of the apple slices over it.
  • Dollop the remaining batter over the apples and gently spread it to cover them fully, then arrange the remaining apple slices on top.
  • Mix the sugar and cinnamon for the topping, then sprinkle evenly over the apples.
  • Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
  • Let the cake cool in the pan for 10-15 minutes before slicing.
