Step‑by‑Step Instructions for Christmas Toffee

  • Gather all the ingredients needed for your Christmas Toffee: chopped pecans or almonds, butter, granulated sugar, water, salt, vanilla, chocolate chips, and finely chopped pecans for topping.
  • Line a 9x9 inch baking dish with parchment paper.
  • Evenly spread 1 cup of chopped pecans or almonds on the bottom of the baking dish and press down gently.
  • In a medium pot, combine the butter, granulated sugar, water, and salt over medium heat, stirring frequently.
  • Attach a candy thermometer and aim for the hard crack stage at 300°F.
  • Once the mixture reaches 300°F, promptly remove it from heat.
  • Carefully stir in the teaspoon of vanilla.
  • Immediately pour the hot caramel mixture over the layer of nuts.
  • After 2 minutes of cooling, sprinkle chocolate chips over the caramel layer.
  • Uncover and gently swirl the melted chocolate until smooth.
  • Sprinkle finely chopped pecans on top of the chocolate.
  • Let the toffee cool completely for about 4 hours at room temperature.
  • Once cool, lift it out of the pan and cut into pieces.

Notes

Store in an airtight container. Can be refrigerated or frozen for longer storage.
