  • Prepare the Chicken: If using leftover chicken, shred or dice it. For fresh chicken, season and pan-sear for 6-8 minutes until cooked, then shred.
  • Make the Ranch Filling: Whisk together Greek yogurt and ranch dressing, add spices, and fold in chicken until coated.
  • Add Vegetables: Mix in red onion, bell pepper, corn, and herbs into the chicken ranch filling.
  • Prepare Cheese Blend: Combine mozzarella, cheddar, and optional Parmesan in a bowl.
  • Assemble Quesadillas: Lay tortillas flat, add cheese, chicken ranch filling, and more cheese, then fold and seal.
  • Heat the Pan: Heat a skillet, add oil, and ensure it's evenly coated.
  • Cook the Quesadillas (First Side): Cook one quesadilla for 2-3 minutes until golden and cheese melts.
  • Flip and Cook (Second Side): Flip and cook for another 2-3 minutes until crisp.
