Step-by-Step Instructions

  • In a large pot, heat the oil over medium heat until it shimmers. Add cumin seeds and let them splutter for about 30 seconds.
  • Add the finely sliced onions to the pot, stirring occasionally. Sauté for about 10-12 minutes until golden brown.
  • Stir in ginger-garlic paste, cooking for 1-2 minutes until fragrant and slightly golden.
  • Add chili powder, turmeric powder, coriander powder, and salt. Stir well and cook for 2 minutes.
  • Introduce mutton pieces, searing for about 5-7 minutes until browned on all sides.
  • Add chopped tomatoes and yogurt, mixing well. Cook for approximately 5 minutes.
  • Pour in water, cover the pot and simmer for 45-60 minutes on low heat.
  • Add garam masala and green chilies, cooking for an additional 5 minutes.
  • Garnish with fresh cilantro before serving.

Notes

Serve with naan or rice for a complete meal. Use bone-in mutton for richer flavor and ensure yogurt is at room temperature before use.
