Ingredients
  

For the Rice

  • 2 cups Jasmine rice rinsed
  • 1.5 cups Coconut milk
  • 1.5 cups Water

For the Chicken

  • 1 pound Boneless, skinless chicken thighs cut into pieces
  • 2 tablespoons Olive oil for searing
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated

For the Sauce

  • 1 tablespoon Soy sauce
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar

For the Vegetables

  • 1 cup Red bell pepper sliced
  • 1 cup Sugar snap peas
  • 1 cup Shredded carrots

For Garnish

  • 1 cup Fresh cilantro chopped
  • Salt to taste
  • Pepper to taste
  • Lime wedges for serving

Instructions
 

Preparation Steps

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice, coconut milk, and water. Bring to a boil, then simmer for 15 minutes.
  • Turn off the heat and let the rice sit, covered, for 10 minutes.
  • Season chicken thighs with salt and pepper.
  • Heat olive oil in a large skillet and cook chicken for 5-7 minutes until golden brown. Remove and set aside.
  • In the same skillet, sauté minced garlic and grated ginger for about 1 minute.
  • Add soy sauce, fish sauce, and brown sugar, stirring to combine and simmer.
  • Add the sliced red bell pepper, sugar snap peas, and carrots; stir-fry for 3-4 minutes until tender-crisp.
  • Return the chicken to the skillet, stir to combine, and cook for an additional 2-3 minutes.
  • Serve rice in bowls and top with the chicken and vegetable mixture.
  • Garnish with cilantro and serve with lime wedges on the side.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently.
