Ingredients
  

For the Pasta

  • 400 grams pasta Use spaghetti or fettuccine based on your preference.

For the Sweet Onions

  • 4 medium-sized onions Slicing them thinly ensures they caramelize beautifully.
  • 4 tablespoons olive oil This helps in sautéing the onions to perfection.
  • 1 teaspoon sugar Enhances caramelization and flavor.
  • 1 teaspoon salt Balances the sweetness of the onions.

For Flavor

  • 3 cloves garlic Minced for a fragrant punch.
  • ½ teaspoon black pepper Adds a touch of heat.

For the Finishing Touch

  • ¼ cup grated Parmesan cheese Optional for a creamy elevate.
  • fresh parsley Chopped, for color and freshness.
  • 2-3 tablespoons chilli oil Adjust according to your spice tolerance.

Instructions
 

  • Begin by bringing a large pot of salted water to a rolling boil. Add 400 grams of pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water and drain the rest.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the thinly sliced onions and sprinkle with salt. Sauté for about 10 minutes until they start to soften.
  • Sprinkle in 1 teaspoon of sugar and continue cooking for an additional 15-20 minutes until the onions turn golden brown.
  • Introduce 3 minced cloves of garlic to the skillet in the final few minutes. Stir for 1-2 minutes until fragrant.
  • Reduce heat to low and add the drained pasta to the skillet. Toss together and gradually add reserved pasta water until desired consistency is achieved.
  • Drizzle the remaining olive oil and chilli oil over the pasta, then season with black pepper. Toss well to coat.
  • Plate the pasta and sprinkle with Parmesan cheese and parsley. Enjoy your delicious dish!

Notes

Thinly slice the onions for even caramelization. Use reserved pasta water to achieve a creamy sauce. Adjust chilli oil according to your spice preference.
