Instructions

Step‑by‑Step Instructions

  • Heat 2 tablespoons of olive oil in a large heavy-bottom pot over medium heat. Once the oil glistens, add the diced onion along with the green and red bell peppers. Sauté for about 5 minutes, stirring occasionally, until the vegetables soften and become fragrant.
  • Stir in the minced garlic and cook for 1 minute until it becomes fragrant. Next, increase the heat slightly, then add ground beef and ground pork. Break the meat apart as it cooks, browning for about 8 minutes until no pink remains.
  • Once the meat is browned, stir in tomato paste, chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for about 2 minutes, allowing the spices to toast.
  • Pour in the diced tomatoes, beef broth, drained kidney and pinto beans, and minced chipotle pepper. Stir well and bring to a gentle boil.
  • Once boiling, reduce heat to low and let the chili simmer uncovered for at least 1 hour, stirring occasionally to prevent sticking.
  • In the last 10 minutes of simmering, stir in brown sugar and taste the chili. Adjust the seasoning if needed.
  • Once the cooking time is up, serve the chili hot with your favorite toppings such as cheese, sour cream, or cilantro.
