Step-by-Step Instructions

  • Heat 1 tablespoon of olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing for about 3 minutes until the onion is translucent.
  • Add 1 pound of ground beef to the pot. Cook for about 5-7 minutes until the beef is browned with no pink remaining.
  • Stir in 2 tablespoons of chili powder, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, and ½ teaspoon of cayenne pepper. Cook for 2 minutes.
  • Mix in 1 tablespoon of tomato paste, then add a can of diced tomatoes and 1 cup of beef broth. Stir to combine.
  • Bring the chili to a gentle boil, then reduce heat to low. Cover and let it simmer for at least 1 hour, stirring occasionally.
  • After simmering, gently stir in 1 can of drained and rinsed kidney beans. Cover and cook for an additional 15-20 minutes.
