Step-by-Step Instructions for Slow Cooker Chili

  • In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes, until translucent. Stir in minced garlic and cook for another minute.
  • Add ground beef and ground pork to the skillet. Cook for about 8-10 minutes, breaking up the meat until no longer pink. Drain excess fat and transfer to slow cooker.
  • In the slow cooker, add diced tomatoes, kidney beans, black beans, and tomato paste. Pour in beef broth and stir to combine.
  • Sprinkle in chili powder, ground cumin, paprika, cayenne pepper, salt, and black pepper. Mix well to incorporate the spices.
  • Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  • Once cooking time is complete, taste and adjust seasoning as necessary before serving.

Notes

For best flavor, brown the meat first and cook on low for a richer chili.
