Step-by-Step Instructions for Minestrone Soup

  • Heat the oil by using the Sauté function of your Instant Pot. Pour in the olive oil and let it heat until shimmering, about 1–2 minutes.
  • Sauté the diced onion, sliced carrots, sliced celery, and diced zucchini for about 2-3 minutes until fragrant and softened. Add Italian seasoning and salt, mixing well.
  • Incorporate the diced tomatoes, tomato sauce, green beans, and white kidney beans into the pot. Stir to combine.
  • Add water or vegetable broth and dry shell pasta. Stir to ensure the pasta is submerged.
  • Seal the lid of the Instant Pot and set the steam release knob to SEAL position. Pressure cook for 5 minutes.
  • Quick release the pressure by turning the steam release valve to the venting position. Open the lid once the steam stops.
  • Taste your soup and season with additional salt and pepper if needed. Garnish with chopped parsley before serving.
