Step-by-Step Instructions

  • Heat 1 tablespoon of olive oil over medium heat in a large pot. Add 1 pound of ground beef, breaking apart with a spatula. Cook for 5-7 minutes until browned and no longer pink.
  • Stir in 1 cup of chopped onion, 1 cup of chopped bell pepper, and 1 tablespoon of minced garlic. Cook for another 3-5 minutes until the vegetables soften.
  • Add 1 can of diced tomatoes, 1 can of kidney beans, and 2 cups of beef broth. Sprinkle with 2 tablespoons of chili powder, 1 teaspoon of cumin, ½ teaspoon of smoked paprika, ½ teaspoon of oregano, 1 teaspoon of salt, and ½ teaspoon of black pepper. Stir well.
  • Increase heat to bring mixture to a rolling boil, about 5 minutes.
  • Reduce heat to low and let chili simmer for 30-40 minutes, stirring occasionally.
  • If using, add 1 cup of corn during the last 10 minutes of cooking. Stir gently until heated through.
