  • In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing for about 5 minutes until translucent.
  • Add diced tomatoes, seafood stock, and white wine to the pot. Increase heat and bring to a gentle simmer for about 5 minutes.
  • Stir in dried oregano and red pepper flakes, seasoning with salt and pepper. Simmer for another 5 minutes to deepen flavors.
  • Add clams to the pot and cover. Cook for 5-7 minutes until they begin to open, discarding any that remain closed.
  • Add shrimp and fish to the pot, stirring gently. Cook for an additional 5-7 minutes until shrimp turns pink and fish flakes easily.
  • If using crab, add it now and heat through for about 3-5 minutes.
  • Ladle Cioppino into bowls, garnishing with fresh herbs and serving with crusty bread.
