Equipment

Ingredients

For the Soup

  • 4 pieces Boneless, skinless chicken breasts
  • 2 cups Carrots, chopped
  • 2 cups Celery, chopped
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 8 ounces Egg noodles wide
  • 4 cups Low-sodium chicken broth
  • 2 teaspoons Olive oil
  • 1 teaspoon Dried thyme
  • ¼ cup Fresh parsley, chopped
  • to taste Salt and pepper

Instructions

Step-by-Step Instructions

  • Begin by meticulously chopping the onions, carrots, and celery. Mince the garlic cloves, ensuring you have bright, fresh ingredients ready to bring flavor into your Hearty Chicken Noodle Soup. This initial step typically takes about 10–15 minutes but will set you up for a smooth cooking process.
  • In a large pot, heat 2 teaspoons of olive oil over medium heat. Once shimmering, toss in the chopped onion and minced garlic—sauté for about 2 minutes until fragrant. Next, add the sliced carrots and diced celery, stirring occasionally for approximately 5 minutes until the vegetables soften and release their aromas.
  • Add the 4 boneless, skinless chicken breasts to the pot, alongside 4 cups of low-sodium chicken broth. Raise the heat until it reaches a boil, then reduce to a gentle simmer. Cover and let it cook for about 20 minutes, or until the chicken is fully cooked through.
  • Once cooked, carefully remove the chicken breasts from the pot. Use two forks to shred the chicken into bite-sized pieces, then add it back along with any collected juices.
  • Stir in 8 ounces of wide egg noodles into the simmering soup. Cook according to package directions, which should take about 8 minutes until al dente.
  • Once the noodles are ready, stir in 1 teaspoon of dried thyme and ¼ cup of chopped fresh parsley. Season with salt and pepper to taste. Allow to simmer for an additional 2 minutes before serving hot.

Notes

Use fresh, high-quality chicken breasts for the best flavor. Omit noodles if planning to freeze. Always reheat gently and check seasoning before serving leftovers.
