  • 1 lb beef stew meat cut into bite-sized pieces
  • 2 tablespoons olive oil for browning the beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery diced
  • 3 cups beef broth
  • 2 cups water
  • 1 can canned diced tomatoes with juice
  • 1 cup green beans chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 leaves bay leaves
  • to taste salt
  • to taste pepper
  • 1 cup corn fresh or frozen
  • 1 cup potatoes diced

Step‑by‑Step Instructions for Vegetable Beef Soup

  • In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add 1 lb of beef stew meat cut into bite-sized pieces and season with salt and pepper. Sear the beef for about 5-7 minutes, turning occasionally, until browned on all sides.
  • Once the beef is browned, reduce heat and add 1 medium diced onion and 3 minced garlic cloves. Cook for 2-3 minutes until the onion becomes translucent.
  • Stir in 2 sliced carrots and 2 diced celery stalks, cooking for an additional 3 minutes.
  • Pour in 3 cups of beef broth and 2 cups of water. Scrape up any browned bits from the pot. Bring to a gentle simmer.
  • Add 1 can of diced tomatoes, 1 cup of chopped green beans, 1 teaspoon of dried thyme, 1 teaspoon of dried oregano, and 2 bay leaves. Stir thoroughly.
  • Bring to a boil, then reduce the heat to low and cover. Allow it to simmer for about 45 minutes, stirring occasionally.
  • In the last 15 minutes, add 1 cup of diced potatoes and 1 cup of corn. Stir well.
  • Once tender, taste and adjust seasoning as desired. Remove bay leaves before serving.
  • Ladle into bowls and enjoy hot, garnished with fresh herbs or cheese if desired.

Notes

Leftovers taste even better the next day; store in an airtight container in the fridge for up to 3 days.
